What We Loved
Roti Pradhaman, a spin on Kerala’s classic dessert where torn leftover rotis replace Ada in a Pradhaman of jaggery, coconut milk, and cardamom. A recipe by sisters Jinnie and Rini, inspired by the childhood dish of milk, sugar, and leftover rotis made by their late mother.
A clever way to use old rotis, by kneading them with a mixture of ghee, jaggery, and cardamom, and rolling them into small ladoos.
Cooked millet and mixed vegetables bound with spices and shallow-fried into crisp patties. A zero-waste snack that gives yesterday’s meal a fresh, crunchy life.
