This sweet and sour pickle—made using a heirloom recipe from Gwalior, Madhya Pradesh—has thickly sliced lemon pieces along with whole spices like cumin, black pepper, peepal, brown cardamom, clove, to name a few.

Have it alongside simple dishes like dal and rice, or roti, to elevate them. The sweet and sour profile works well with snacks like mathri or khakra, or stirred into dal for a brighter, lemony edge. It can also be paired with parathas, added to a thali for contrast, or used in small amounts in wraps or sandwiches when you want a sweet and citrusy hit.

This pickle is entirely handmade by local women, and preserved in barnis or earthen jars without any chemical additives.

Aamra, founded under Nari Shiksha Kendra, sells heirloom pickles and chutneys made using traditional methods by local women in Ghaziabad. Based on recipes collected from homes across north Indian states like Uttar Pradesh, Delhi, and Rajasthan, a group of 13 women source, process, and mature the ingredients all-year-round.
