The Mandava Project tastes for seasoning and texture along the way, and adds grated vegetables for texture, colour and flavour depending on the checks.
Cook them before eating, either by air frying or deep frying until they puff up and turn crisp. Once done, have them as you would any fryum, alongside everyday meals like rice and curry, or as a quick snack with chai. They also work well as a crunchy addition to salads or soups when you want a bit of texture.
With the intent to support agrarian livelihoods, The Manduva Project sources ingredients from several farmers, which are processed in Andhra Pradesh’s Annadeverapeta and Uppalametta. The staff on these sites and those who form the team that handles operations are all women.
