Farmers in the Western Ghats handpick and sort each cardamom pod to ensure high quality.
Crush the pods lightly and add them to kheer, chai, or desserts. You can also use them whole in rice dishes like biryani or pulao. A little goes a long way, so start small and build up depending on how pronounced you want the flavour.
