Often known as the ‘King of Paddy’, Ajara Ghansal is a highly aromatic Gi-tagged rice with short, bold grains. It has a tender, non-sticky texture and a distinct creamy white appearance.
You’ll be buying directly from the producer. The Locavore does not handle orders, payments, delivery, or customer support.
Ajara Ghansal is one of the several native varieties that have been revived by OOO Farms. Traditionally, farming communities would feed it to babies as it is easily digestible. It is also known for being easy on the gut.
Use it as you would everyday rice—cooked and served alongside meals, where its soft texture and gentle aroma come through best. It works especially well with simple dishes like dal, vegetable curries, or fish and meat gravies, and can also be used in preparations like khichdi or doodh bhaat when you want something lighter and more comforting. Pro tip: cook the rice in an open vessel to retain its aroma.
Working with indigenous farmers across Maharashtra and Gujarat, OOO Farms is anchored in ideas of equity. Their work involves conserving native seeds, encouraging financial independence amongst farmers, and safeguarding indigenous wisdom and agricultural practices.
