Black chana or Bengal gram is a hardy, dark-coloured indigenous chickpea variety, grown in Gujarat’s relatively dry climate.

Use it the way you would any whole chana, soaked and cooked into everyday dishes like curries, dals, or salads. It also works well boiled and tossed with spices as a simple snack, or added to chaats and stir-fries for texture and protein. Once cooked, it holds its shape well and can be used across a range of savoury dishes. Savour it in dishes like chickpea parathas, a black chickpea koshimbir, or Sundal—a stir-fried Tamil preparation.
