Encased in hard brown shells, these pine nuts—locally called chilgoza—are sweet and nutty.

Toast the pine nuts on a dry skillet or pan on the stove for around 3 seconds so they pop out of their shell easily. Avoid using oil or butter, as it can burn the nuts. You can add the pine nuts as a topping on kheer or suji halwa, or simply snack on them.
Zangti sources pine cones—native to Kinnaur—from high altitude forests up to 2,000 metres. These cones are dried in the sun and then opened by hand to extract the seeds or pine nuts. The seeds are sorted and cleaned by hand, and then stored in a cool, dark space to preserve their freshness.
Zangti—which means ‘golden water’ in Kinnauri—sources high quality produce native to the Kinnaur district in Himachal Pradesh. While Kinnaur is typically renowned for its golden apples, Zangti, puts the spotlight on lesser-known ingredients like apricots, black cumin, and Kinnauri rajma that are grown without any chemical inputs.
