The cooking lab under the Millet Revival Project will be engaged in exploring, sourcing, and documenting different methods of cooking millets and millet-based recipes. The primary outcome of these engagements will be recipes on The Locavore and MRP website, the Millet Cookbook, and a Know Your Millets section on The Locavore & MRP website. These recipes will also be used for events and other engagements and collaborations that will showcase the work of the project to a broader audience.

About the Role
As a chef volunteer for the Cooking Lab, you will play a crucial role in developing and refining millet-based recipes, testing their feasibility, and contributing to culinary knowledge surrounding millets.
Your knowledge of innovative culinary techniques and research skills will allow us to develop millet-based recipes that showcase the versatility, taste, and nutritional benefits of millets, as well as document traditional millet-based recipes. You will have to plan and execute recipe testing sessions in your kitchen, ensuring that you document the process accurately in the prescribed format, and share your insights and learnings with the team on the weekly update calls.
You will test recipes prepared by fellow team members, evaluating their dishes and providing detailed feedback on taste, texture, appearance, and overall quality. Your attention to detail, organisational skills, and effective record-keeping will contribute to the development of a millet cookbook and recipes on our digital platforms.
You should be comfortable with food photography and be able to make short video clips to demonstrate the recipes you develop. These photos and videos must be aesthetically pleasing, so a foundational understanding of food photography is necessary.
You will also assist in organising workshops, demonstrations, and community events to promote millet consumption and their nutritional value. As a part of the project, we aim to hold events in multiple cities across the country, and would need your assistance if organising an event in your city.
We expect our volunteers to commit to submitting five recipes a month, based on the themes and concepts decided by the Cooking Lab Lead. In addition, all volunteers are expected to attend the hour-long weekly touch-base calls with the entire team, to ideate and update the team on their progress, and challenges and successes with the millet recipe testing.
While culinary training or formal culinary education is preferred, it is not mandatory. So even if you are a home chef, you are welcome to join our team, as long as you are passionate about cooking and exploring new ingredients. Your love for cooking sustainably and experimenting with food practices will help us realise our goal of promoting easy and exciting millet cooking!
