It is a versatile flavour bomb rooted in indigenous flavours from Kerala: unique, spicy and floral notes from white Kanthari chillies, tingling heat from green peppercorns, and the saltiness from Ishka’s capers.

Use it in small amounts as you would any hot sauce, added to sandwiches, wraps, or fried snacks when you want to bring in heat and depth. It also works well stirred into stews, pasta, or even simple vegetables to shift the flavour without much effort, or mixed with oil or vinegar as a quick dressing. Because it is quite punchy, a little goes a long way.

Ishka Farms is India’s only organised caper farm. Their decision to cultivate capers—which require little water—reflects their intention to transform barren land in Tamil Nadu into a lush green farm. They work with experts to take great care of the arid soil and are conscious of their groundwater use.
