Instead of grinding the base grain, this flour is made from amaranth—or cholai—that is sprouted before being ground. The sprouting process breaks down the starches into sugars, bringing out the grain’s natural sweetness.

You’ll be buying directly from the producer. The Locavore does not handle orders, payments, delivery, or customer support.

Given the fluctuating, unpredictable weather patterns in the mountains of Uttarakhand, Kilmora buys produce that is in season and isn’t rigid about the variety of amaranth available.

Use it in combination with other flours for everyday cooking, mixed into doughs for rotis or parathas, or added to batters for pancakes and simple bakes. It also works well in cookies or breads, where its natural sweetness can reduce the need for added sugar, making it an easy way to bring more depth into familiar recipes. 

Kilmora works with over 300 farmers in the Nainital district, and uses the profits earned to give a fair price to these farmers. They are vigilant about buying produce that is grown sustainably and using indigenous knowledge, which, in turn, incentivises the farmers to sow season-specific crops that do not require any chemical inputs.
