Made from Bilimbi, or the tree sorrel fruit, the complex sourness of this pickle together with the caramelised fruit balances perfectly with the spice.

Sheilas only produces the Vilumbi Puli Pickle when the fruit is in season, and fresh produce is available, keeping seasonality in mind. 

Use it in small amounts alongside a meal, especially with rice and curries where its sharp sourness can cut through richer flavours. It works particularly well with fish or meat curries, but can also lift simple vegetable dishes when you want something more assertive on the side. Because it is quite intense, a little goes a long way. We also love it with warm appams or with steaming puttu, payar (fresh moong cooked with grated coconut), and pappadam.

Sheilas makes preserves and pickles from produce grown in and around Mundakayam in the Kottayam district in Kerala. In order to maintain quality and consistency, Sheilas focuses on small-batch production. Their batches are limited to around 70 bottles at a time, and all production is done manually.
