Cascara, or dried coffee cherry husk, is a fruity, and slightly sweet byproduct of coffee processing that resembles tea more than a cup of coffee. Made from Arabica coffee, it is light-bodied with notes of hibiscus, rosehip, and sometimes tobacco.

Cascara is typically discarded after the coffee fruit is pulped, and thus, can pollute waterways, contaminate natural streams, or leach into the soil. At The Locavore, we love how it reflects a more conscious, thoughtful way of using ingredients. Plus, it makes for a versatile beverage!

Brew it like you would a loose-leaf tea. It also tastes great as a cold brew: steep overnight, strain and refrigerate the next morning. Also, a creative base for cocktails.
