This short-grain, low-starch, fragrant rice, which almost disappeared from our plates after the Green Revolution, was revived by farmers and activists as part of the Save Our Rice campaign.

The needle-like protrusion on the awn of the paddy of the Mullankaima Rice protects it from birds, and is the reason why it has a better yield than other fragrant varieties of rice.

Since the Mullankaima grain is bigger than your typical rice, use about 3 cups of water to boil one cup of rice. You can cook it as you would regular rice. It works well with simple dishes like rasam, sambar, or vegetable curries, where its mild aroma comes through. You can also use it for pulao or lighter rice dishes when you want a more fragrant base.
