Cascara, or dried coffee cherry husk, is a fruity, and slightly sweet byproduct of coffee processing that resembles tea more than a cup of coffee. Made from Arabica coffee, it is light-bodied with notes of hibiscus, rosehip, and sometimes tobacco.
Made from Bilimbi, or the tree sorrel fruit, the complex sourness of this pickle together with the caramelised fruit balances perfectly with the spice.
