Based on a regional recipe from Rajasthan and made using native ingredients, this is a vibrant, fiery, and spicy chutney.

Use it in small amounts, the way you would a chutney, alongside a meal or with snacks. It works especially well with parathas, rotis, or dal chawal. You can also pair it with chilla, kachori, or pakodas, or mix it into curd when you want to soften the heat. If you’re looking to experiment, ChefTZac also recommends adding it to chaat. 

The spiciness of red Kashmiri chillies is offset by the unique sourness of dried kachri or wild melon. 

Aamra, founded under Nari Shiksha Kendra, sells heirloom pickles and chutneys made using traditional methods by local women in Ghaziabad. Based on recipes collected from homes across north Indian states like Uttar Pradesh, Delhi, and Rajasthan, a group of 13  women source, process, and mature the ingredients all-year-round.
